Education and Training

The Dietary Managers Association (DMA) offers you the chance to earn a Certified Dietary Manager, Certified Food Protection Professional (CDM, CFPP) credential. To become a CDM, CFPP, you can complete a DMA-approved training program for dietary managers (www.dmaonline.org). Once you finish your training, you must pass a national certification exam available through the DMA certification program. Approved training programs are available in both on-campus and online formats and are typically offered as certificate or associate degree programs. Once certified, you are expected to complete 45 hours of continuing education, five of which must be in sanitation and food safety, every three years to maintain your certification.

Programs approved by the DMA are offered at nearly 100 educational institutions, with several being offered in online formats. Barton County Community College

Barton County Community College in Great Bend, Kansas, provides several distance learning opportunities in dietary management. The 16-credit-hour certificate program includes online courses in food management, sanitation, and nutrition theory. The college also offers a distance learning associate's degree in conjunction with Kansas State University.

Community College of Allegheny County

The two-semester dietary manager certificate program at the Community College of Allegheny County in Pittsburgh, Pennsylvania, includes online courses in medical terminology, nutrition, food service, and nutrition therapy. This program requires a summer session consisting of a dietetic seminar and a supervised clinical practice.

University of North Dakota

Offered either online or through mail correspondence, the nutrition and foodservice professional training course provided by the University of North Dakota, based out of Grand Forks, North Dakota, requires 120 hours of classroom instruction and 150 practical hours under the supervision of a registered dietician. Topics include personnel management, nutrition, sanitation and food production. The university also offers an online dietary exam review course that can help you prepare for the DMA credentialing exam.
